The WCC Recipe Block System is a modular framework for building varietal ethnic chili dishes as practical everyday food. The goal is not simply to win chili competitions. Core Naming Terms
Puré means fresh vegetables are blended or pureed into the mole cooking base. This creates a smoother, vegetable-rich sauce that becomes part of the body of the chili.
Alfresca means fresh vegetables are added near the end as a fresh vegetable finish. These vegetables remain more distinct in color, texture, and flavor.
